Wednesday we had to leave early in the morning to get to Murfreesboro, TN so Norman could get his shot in his eye.  The shots are working and they are saving his vision.  We have no idea how long they will work but we will stick to them each month as long as they work.  On the way home we stopped in McMinnville to do our shopping.   This morning I got the chicken on to marinate and then got my bread rising.  We were all out of bread so that was the first order or of business today.  Then I glazed my fruit cakes and it was time to cook dinner.  I made sage mushrooms and potatoes, heated up yesterdays squash and fried some beet greens from the freezer.  The chicken was all marinated so I fried that.  Here is the recipe for the chicken:  Zesty Mustard Chicken:  I used four thighs skinned and trimmed of all fat.  I marinated them for 4 hours in 1/4 cup prepared mustard, 1/4 cup honey, 1 tablespoon Italian seasoning blend, and 1/3 cup red wine vinegar.  Mix well and put into a plastic freezer bag with the thighs and put into the refigerator until ready to fry.  In a non stick electric frying pan set at 300 degrees spray with olive oil , put in the chicken and spoon some of the marinard over each thigh.  Cover and cook for 35 minutes.  Turn and add more marinard every 5 or 6 minutes.  If they cook too fast lower the heat so the marinard reduces but does not burn.  When done put the chicken in a serving dish and pour the reduced marinard over them.  It came out very good, we could have both eaten more but 4 ounces of meat a day is all we are allowed at our age to tonight we are having a little piece of steak left from Tuesdays dinner with the pan fried potatoes left from Tueday and frying a egg to go with it so we have to be sure not to over eat at noon.   I am not sure which I like the best, cooking or eating but they are both my favorite past times.  Wish I could eat all I want to but if I did I would look like a blimp and be sick all the time.  Moderation is so important to good health.  Have a great day.

I am a retired teacher. I have taught all levels from kindergarten through college and have been retired now for over 20 years. The last ten years we have lived on a farm and lived off the land, growing our own food and canning for our extended family. Now we have sold the farm and are moving to Florida to truly retire. I guess I have always had a short attention span as this is our 11th move. We have moved from a small farm in New Hampshire, to more city type living, small business adventures, focusing more on traveling, Florida living, Georgia, and Tennessee farming and now back to Florida. My blog is a way to keep my children up to date on what I am doing and letting them know I am still alive and well. My children are spread across the country from New England to Florida, Nova Scotia to New Mexico and CA and several places between, They let me know what they are up to by commenting on my blog but they are so busy with their own lives most times I have to assume " no news is good news". Now I are starting on a new adventure so will try to give daily updates until we get settled into a routine. Then I know even if I am getting older and should settle down I will start looking for some new and exciting adventure to start. Welcome aboard. Norman died Oct 30, 2017 so I am continuing the journey alone with the aid of my children, grand children and great grand children. At present I am living with my daughter and we are 7 in one house and cover four generations. We range in age from 7 to 85 and are finding common ground, we are living proof that multi generations can live and function in a three bedroom house if they really want to. Soon my grandson will have his house built next door so we all will have a room of their own except for the seven year old twins who by choice will share a room.
